However, in East Kalimantan, particularly in Kutai Kartanegara, there’s a similar-looking delicacy called serabai. Although the names are nearly identical, Kutai’s serabai has distinctive features that set it apart from its Javanese counterpart.
Kutai serabai is made from a simple mixture of rice flour and coconut milk, creating a soft and slightly savory batter. While Javanese serabi tends to be thick and dome-shaped, serabai in Kutai is flatter and wider more akin to a pancake or crepe.
The top surface remains white and tender, while the underside is golden brown to slightly charred, thanks to the traditional use of wood-fired stoves, which impart a smoky aroma and a nostalgic flavor.
One of the unique aspects of serabai is its presentation. Each piece is folded gently in a banana leaf, giving it a rustic look while helping preserve warmth and aroma. Before serving, it is sprinkled with granulated sugar or palm sugar, which melts on the warm surface to create a harmonious sweet-savory balance.
